OK. Here's an update after some suggestions from Jamey via email.
First, everything is working.
Jamey had suggested: RAVEN #1 into the HDMI, RAVEN #2 into the USB port with an Apple Multi-port Adapter, and Display #3 into my Targus dock.
Over the weekend I tried the Apple adapter and still couldn't get it working. Then it occurred to me that I'd read the M1 USB-A ports were limited compared to using USB-A through the USB-C ports via an adapter of any kind. Weird, right? So after trying different port options I was able to get both Ravens recognized via USB. AND the USB-C adapter I'd already owned, prior to the official Apple adapter, works fine. The next issue was that my Targus dock wouldn't work properly with my 2560x1080 conventional monitor, despite suggestions it should. Screen was stretched. I'd originally purchased that Targus 2k dock knowing I didn't need very high resolution with the Ravens, to save a little money and before I realized the Ravens needed to be hooked up directly to the mini for USB functionality. That said, I ordered one of these: www.amazon.com/gp/product/B00OD37KHG for the conventional monitor and it works well. The 2560x1080 resolution is now available via System Preferences. They claim this adapter has its own graphics card. I don't know. I don't care. It's working. And I can move on.
I'm all set. And the Targus dock is going up up for sale. I'd heard some success stories with the Cal Digit dock. That thing makes a lotta sense and I almost had it sent along side the little adapter I ended up with, with one of them going back. I'm trying to justify the expense of that dock at this point, considering I've got things working now and no immediate needs, but I'm considering it as a future purchase.
