I have a dual mti2 set up and a third monitor above on the wall. (Monitor 1 = mti2, monitor 2 = wall mounted monitor, monitor 3 = mti2) Every time I boot up my computer/rig the screens aren't calibrated properly and the touch is off. Im working high sierra and fairly certain the newest driver updates (as i just purchased the setup). After doing a calibration through UPDD, everything works as desired but how do I have it setup so that I dont have to re-calibrate the screens at the start of every day?

Yes, you would have to reconfigure every time there is a display change.
Click the Hand Icon in the menu bar and press "Configure". This will run through a setup screen, where you will need to "TOUCH" the X on the touch screen monitors, and "CLICK" the X on the screen that doesn't have touch.
